But the conversation has largely focused on quantity rather than quality. Novos, a company centered on longevity science, has launched a functional bar, formulated in collaboration with researchers, a dietitian and a Michelin-trained chef. The Novos Bar contains 15 grams of protein and incorporates ingredients associated with cellular and metabolic health. The bar uses a protein blend that is lower in methionine and isoleucine compared to whey, two amino acids that have been linked in animal studies to reduced lifespan. Instead of seed oils or artificial preservatives, the bar includes components commonly found in the Mediterranean diet, such as olive oil, honey and rosemary extract. The formulation also includes a range of whole food ingredients and five compounds tied to longevity research: astaxanthin, taurine, reishi, cordyceps and lion’s mane. A fruit and vegetable blend adds additional nutrients from foods including kale, spinach and sweet potato. The flavors are varied, like Salted Chocolate Crunch, Mixed Berry Crunch and Peanut Butter Chocolate Chip Crunch.
